INGRID HOFFMANN'S MEXICAN CORN SOUP


From TV Food Network's "Simply Delicioso"

This is a great soup, easy to prepare, thick, rich, hardy a meal in itself (even my husband liked it, even if it's almost a vegetarian dish) and it's very versatile. You can garnish it with a wide variety of toppings such as Monterey Jack cheese (or a dollop of sour cream), tortilla strips, sliced avocado, bacon crumbles, maybe a shot of your favorite hot sauce, etc.

You can also add a little cream if you like (I'm lactose inolerant, unfortunately)...
