A SMARTER TUNA SALAD

Recipe from the Walnut Marketing Board

Place 1 (6-ounce) can water-packed tuna in a bowl and flake with a fork.

Add 1 large stalk minced celery, 4 minced radishes, 1 tablespoon minced red onion, half of a minced Granny Smith apple, 2 to 3 tablespoons minced flat-leaf parsley, 2 teaspoons fresh lime juice, 3 to 4 tablespoons reduced-fat mayonnaise and 1⁄4 cup minced toasted walnuts.

Mix well.


NOTES: While this is a great alternative to the traditional tuna salad sandwich, it's not near as good as The Good Earth Tuna Sandwich (see the recipe at the start of this blog). There was nothing distinctive about it other than the crunchiness from the apple, celery and walnuts...
