
Ingeredients:
3 to 5 Roma Tomatoes
1 Medium Bell Pepper
1 Medium Yellow or White Onion
1 12 Ounce can of Tomato Juice
1 Small Jalapeno Pepper
1/2 Bunch Cilantro
1/2 Bunch of Parsley
Salt
Black Pepper
Cayenne
Pepper
Lime or Lemon Juice
1/8th Teaspoon Cumin
Instructions:
1) Chop vegetables into medium sized pieces, add to blender, blend (until proper consistency), season to taste and store in a glass container.
2) The dressing is a basic vinaigrette with chopped green onions and a touch of cilantro mixed into the tuna of your choice.
3) Serve with chips & salsa on the side, a dollop of sour cream on top, sliced avocado and sliced tomato on a bed of shredded lettuce or a lettuce cup, if you prefer (I also add a sliced hard-boiled egg).
Iced tea goes very well with it.
NOTE: We found this recipe on the side of a Heinz vinegar bottle about 10 years ago and it is now one of our favorites.
